We made cilantro lime rice bowls topped with black beans, sautéed veggies (sweet onion, garlic, zucchini, and cauliflower), jackfruit (as a meat sub), and homemade guac! This was definitely one of our better creations yet.
In the interest of full disclosure, Panda dipped into his previous experience/bag of tricks as a former Kitchen and Service Manager for Chipotle. He may have borrowed some pieces of their recipes for inspo 😉
Lani infused the veggies, beans, jackfruit and guacamole with an exceptional amount of reiki, gratitude and lots of love. 🙂 Along with some delicious seasonings such as turmeric, cayenne, cumin, garlic, sea salt, and nutritional yeast, this meal is packed with protein, fiber and nutrients such as B12s and vitamins A and C.
We’ve worked out a wonderful team system in which Panda handles most of the cutting/prep and Lani cooks and seasons the meal to perfection. Afterwards, he washes dishes and she dries and puts away. Our chemistry is apparent in and out of the kitchen! 😁😉
